Easy healthy recipes using avocado

You guessed it. I am obsessed with avocados, or as I call them:Β aguacates. I was raised with an avocado tree in my backyard so it was pretty easy for me to eat an avocado with almost every meal. Playing around with avocados while I’m away from home reminds me of my roots and family so I decided to show you two of my favorite meals that include avocado. They are easy to prepare and super healthy! Β ~Avocado caprese salad with grilled chicken~

First,Β do yourself a favor and buy some fresh mozzarella, there’s nothing quite like it…

Second, season chicken breasts with salt, pepper and Italian seasoning (basil, oregano, rosemary and garlic powder.)

Chop the cherry tomatoes, spinach, avocado and fresh mozzarella. Toss them all together and VOILA, this will be your salad! Don’t forget to add a little lemon, olive oil, salt and pepper for flavoring.

Here it is! Your grilled chicken breast with the delicious avocado caprese salad. Perfect for a get together with the family or some friends. They’ll think you are a master chef!Β ~Avocado-cashew toast & hummus caprese toast~

Don’t throw away the leftover avocado! You can mash it instead and add some olive oil with sea salt, this will make some kind of guacamole you will then spread on top of a toasted whole grain bread. My secret is to also add some cashews over it to give it a little crunchiness! πŸ˜‰

For the second toast, you will spread some hummus on top of a toasted whole grain bread, you will then add some pieces of fresh mozzarella and cherry tomatoes. Of course, we can’t miss the pepper so make sure to put some on both toasts!
